Unwanted substances due to fermentation and ripening
Many drinks and condiments are derived from fruit and herbs. Winemakers and distillers achieve the desired taste and colour of their products by means of controlled fermentation and maturation processes. However, these also produce undesirable substances, such as fusel alcohols, which impair taste and reduce consumer pleasure. Also, the finished product must be entirely free of pesticides used during growth of the original plants.
